Red, White & Blue Fruit Cake

Ingredients

  • 1 (9-inch) vanilla or white cake (homemade or boxed)
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1½ cups fresh blueberries
  • 1 cup raspberries (optional)
  • Fresh mint for garnish (optional)

Directions

  1. Bake and cool your 9-inch round cake.
  2. Whip together the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  3. Decorate with fresh strawberries and blueberries, creating beautiful red, white, and blue rings or your own creative design.
  4. Chill for 1–2 hours before serving and enjoy!
